<p>Ingredienti:</p>
<p>200 gr ricotta  4 fette di pane morbido senza crosta (io ho messo circa 30 gr di pane grattugiato)  1 uovo  30 gr parmigiano  basilico  capperi  1 spicchio aglio  origano  2 pomodori grappolo</p>
<p>Procedimento:</p>
<p>nel boccale del bimby o in 1 mixer unite aglio, parmigiano, pane grattugiato ed erbe  e   mescolate, unite l&#8217;uovo, la ricotta, sale, pepe e capperi.  Tagliate i pomodori a pezzetti e metteteli su una pirofila coperta di carta forno, conditeli con un   filo d&#8217;olio, sale ed origano. Formate le polpettine, unitele ai pomodori. Chiudete il cartoccio di   carta forrno con degli stecchini e cuocete per 25 min a 180° col forno già ben caldo.</p>

<p> Ingredienti:</p>
<p>150 gr farina 00 250 ml acqua 100 gr di burro 4 uova  1 sale qb  Preparazione Impasto dei bignè: per chi ce l&#8217;ha può utilizzare il bimby seguendo le indicazioni della Pasta Choux, che riassumo di   seguito: mettere nel boccale acqua, sale e burro (10 min 100° vel 2); aggiungete farina e   lavorate per 30s a vel 4. Lasciate l&#8217;impasto nel boccale che in 10 minuti terminerà la cottura (a   bimby spento). Nei 10 minuti ogni tanto andate a mescolare qualche secondo a vel 4. Dopo   averlo lasciato raffreddare aggiungete un uovo alla volta, lavorate a vel 5 fino ad ottenere un   impasto omogeneo. Aiutandovi con un cucchiaino disponete le palline di pasta su una placca   da forno con cartaforno e distanziateli per bene. Cuocete a forno caldo a 180° per 20 min circa   (dovranno essere dorati e gonfi, non aprite mai il forno).</p>
<p>Crema bignè:</p>
<p>per farcire i bignè potete usare panna o crema a piacimento (si solito utilizzo la crema Bimby). 2 uova 50 gr farina 1/2 l di latte 100 gr zucchero vanillina Mettete tutto nel boccale e cuocete per 7 min 90° vel 4.</p>
<p>Farcitura.</p>
<p>Raffreddati i bignè farciteli e disponeteli su un piatto abbastanza profondo. Terminata questa   operazione fondete nel microonde 100 gr di cioccolato fondente con una noce di burro e mezzo   bicchierino (da caffé) di latte. Colatelo sopra i bignè e lasciate solidificare.  Decorate a piacere con codette e ciuffetti di panna.</p>

<p>Ingredienti:</p>
<p>110 gr di cous-cous<br />
un cucchiaio di pesto<br />
1 melanzana piccola (di quelle lunghe e scure)<br />
100 gr di mozzarella (o in alternativa scamorza o provola)<br />
sale, olio<br />
alcune foglie di basilico<br />
pecorino stagionato a scaglie (o ricotta salata)</p>
<p>Preparazione</p>
<p>Portate ad ebollizione tanta acqua quanto il peso del cous-cous, aggiungendo olio e sale qb.<br />
Mettere nella pentola il cous-cous e copritelo per alcuni minuti col coperchio; intanto friggete le melanzane a dadini in olio abbondante (anche di oliva). Lasciatele asciugare su carta assorbente, dare una bella mescolata al cous-cous che si sarà gonfiato, aggiungete altro olio e sale e sgranatelo per bene con la forchetta. Condite con pesto, mozzarella a dadini e melanzane. Mescolate bene e servite con abbondante basilico ed una delicata pioggia di ricotta o pecorino stagionato.</p>
<p>Crosta di parmigiano.</p>
<p>Mettete in un padellino caldo del parmigiano grattugiato, dopo fuso a fuoco lento spegnete il gas. Dopo un minuto poggiate la cialda su una coppetta rovesciata, che darà la forma alla crosta.</p>

<ul>
<li>400 g di farina 00</li>
<li>100 g di farina di grano duro</li>
<li>150 ml di olio di oliva</li>
<li>100 ml tra succo di arancia, mandarino e vermouth</li>
<li>500 g tra mandorle tostate pelate, noci e uvetta</li>
<li>cannella, chiodi di garofano, scorza di arancia e  scorza di mandarino</li>
<li>zucchero qb (spolverizzato sulla sfoglia da riempire)</li>
<li>miele millefiori o all&#8217;arancia (all&#8217;uscita)</li>
</ul>
<p>Preparazione dell&#8217;impasto.</p>
<p>Mettete la farina in una ciotola e unite i liquidi con le scorze grattuggiate, la cannella e chiodi di garofano  ed iniziate a mescolare delicatamente con un cucchiaio di legno.</p>
<p>Una volta ottenuto un impasto omogeneo trasferitelo sulla spianatoia e lavoratelo fino ad ottenere un impasto liscio e sodo (fig.1)</p>

<p>Unite le noci e mandorle e tritatele sottilmente. Aggiungete successivamente l&#8217;uvetta ammollata e spolverate con cannella, chiodi di garofano, bagnando con succo di arancia, di mandarino con liquore (vermouth o altro).  Volendo si può preparare anche la sera prima (Fig.2)</p>

<p>Fissate l&#8217;estremità al corpo con uno stecchino (Fig.8)  oppure con uno spago (da qui deriva il nome &#8221; &#8216;mpligliate&#8221;).</p>

<p>Ingredienti: <br style="margin:0;padding:0;" />-Guscio <br style="margin:0;padding:0;" />200 gr di riso <br style="margin:0;padding:0;" />150 gr di emmental ( non l&#8217;ho messo) <br style="margin:0;padding:0;" />2 albumi+ 1 tuorlo( che ho aggiunto io) <br style="margin:0;padding:0;" />1 noce di burro <br style="margin:0;padding:0;" />-Ripieno <br style="margin:0;padding:0;" />Mezza melanzana <br style="margin:0;padding:0;" />2 zucchine <br style="margin:0;padding:0;" />2 peperoni calabresi <br style="margin:0;padding:0;" />mezza cipolla bianca <br style="margin:0;padding:0;" />1 pomodoro maturo <br style="margin:0;padding:0;" />oevo qb <br style="margin:0;padding:0;" />latte qb <br style="margin:0;padding:0;" />2 tuorli <br style="margin:0;padding:0;" />50 gr di provola calabrese <br style="margin:0;padding:0;" />Per realizzare la ricetta ho cotto il riso nel cestello del bimby per 15min, poi  l&#8217; ho raffreddato sotto l&#8217;acqua e messo in una terrina con il burro e l&#8217;ho lasciati riposare . <br style="margin:0;padding:0;" />In una padella ho fatto una ratatuille con melanzana a cubetti , peperoni , zucchine, cipolla e pomodoro  aggiustato di sale e( se piace ) un pizzico di peperoncino e  l&#8217;ho cotta per circa 10 min a fuoco moderato. <br style="margin:0;padding:0;" />Nel frattempo,ho  aggiunto al riso le uova e mescolato con cura. <br style="margin:0;padding:0;" />Dopo di chè  ho adagiato il tutto in una teglia con carta da forno bagnata e strizzata livellandolo con un cucchiaio. <br style="margin:0;padding:0;" />Ho cotto il guscio così realizzato a 200 per 15 min . <br style="margin:0;padding:0;" />Di seguito ho riempito il guscio con le verdure , le uova sbattute con il latte e la provola grattugiata. <br style="margin:0;padding:0;" />Cuocete in forno caldo a 180 per 40 min</p>

<p>La ricetta è molto semplice, per realizzarla è fondamentale avere una buona padella antiaderente , meglio se pressofusa , patate gialle( o viola tipicamente silane), olio axtravergine d&#8217;oliva , e i peperoni piccoli e saporiti( si possono usare anche quelli  comuni ma  il risultato non è lo stesso.</p>
<p><br style="margin:0;padding:0;" />Ingredienti: <br style="margin:0;padding:0;" />400 gr peperoni piccoli calabresi <br style="margin:0;padding:0;" />300 gr patate tagliate a rondelle spesse <br style="margin:0;padding:0;" />oevo qb <br style="margin:0;padding:0;" />sale <br style="margin:0;padding:0;" /> Procedimento: <br style="margin:0;padding:0;" />In una capiente padella  mettete 3 cucchiai di olio ( io faccio ad occhio) e i peperoni lavati , senza semi ne cartilagini, tagliati a pezzi , e le patate tagliate a rondelle spesse . <br style="margin:0;padding:0;" />Salate e cuocete a fuoco moderato  girando delicatamente di tanto in tanto dal basso verso l&#8217;alto per evitare di spappolare le patate. <br style="margin:0;padding:0;" />Il risultato è un insieme di patate croccantine fuori e morbide dentro ,e i peperoni che danno sapore e colore al piatto.</p>

<p>Ingredienti:</p>
<p>4 filetti di trota salmonata <br style="margin:0;padding:0;" />2 limoni <br style="margin:0;padding:0;" />1 spicchio d&#8217;aglio <br style="margin:0;padding:0;" />basilico, prezzemolo, menta, origano, erbe di provenza qb<br style="margin:0;padding:0;" />4 carote a pezzetti <br style="margin:0;padding:0;" />4 patate <br style="margin:0;padding:0;" />2 zucchine <br style="margin:0;padding:0;" />200 gr asparagi <br style="margin:0;padding:0;" />1,5 l acqua<br style="margin:0;padding:0;" />aceto balsamico e sale qb <br style="margin:0;padding:0;" />olio extra vergine d&#8217;oliva qb</p>
<p>Procedimento (con utilizzo del Bimby):</p>
<p>adagiate i filetti in una scodella e irrorate con il  succo di un limone  e una manciata delle erbe elencate, aglio ed un cucchiaino di olio. Lasciate riposare. Nel frattempo mondate le verdure e adagiatele nel vassoio del varoma lasciando lo spazio per il pesce. Nel boccale mettete l&#8217;acqua, l&#8217;aceto balsamico e bucce di limone che avete spremuto prima. Portate a temperatura varoma per 5 min vel 1. Unite il pesce alle verdure nel varoma  e cuocete per 25 min temperatura varoma vel 1. A parte preparate un salmoriglio,  unendo aglio , olio, erbe e succo di limone, mettendo solo alla fine il sale. <p>Ingredienti:</p>
<p>(per i biscotti)</p>
<p>200 gr di farina</p>
<p>3 tuorli d&#8217;uovo</p>
<p>150 gr di zucchero</p>
<p>130 gr di burro</p>
<p>20 gr di latte</p>
<p>1 pizzico di sale</p>
<p>(per la guarnizione)</p>
<p>100 gr cioccolato fondente</p>
<p>40 gr di latte</p>
<p>farina di cocco e codette colorate q.b.</p>
<p>Procedimento:</p>
<p>Impastate gli ingredienti fino ad ottenere una pastafrolla morbida (meglio se il burro è a pezzetti e molto morbido). Riponete l&#8217;impasto in frigorifero avvolto in cartaforno per almeno 40 minuti. Stendete l&#8217;impasto e con l&#8217;aiuto dei taglia-pasta (formine) date forma ai biscotti. Disponete su una placca con cartaforno e cuocete a 160° per 15 minuti. Nel frattempo sciogliete a bagnomaria il cioccolato aggiungendo a poco a poco il latte a fuoco bassissimo. Appena sfornati, decorate i biscotti a vostro piacimento.</p>
<p>Io ho realizzato i miei &#8220;omini&#8221; disegnando col cioccolato occhi, bocca e bottoncini e, tuffando mani e piedi prima nel cioccolato e poi nella farina di cocco o nelle codette colorate.</p>
